By Chloe is a fast casual eatery that started out in Greenwich Village in 2015 and since then has grown to opening a bakery, Sweets by Chloe, and locations in Flatiron, Soho and Los Angeles. There are also two locations opening up in Boston and two more elsewhere in NYC. Each location is customized to its own city and neighborhood. The Greenwich Village location is young and fun with two hanging egg chairs, bright colors, a communal table, fresh potted plants, and bright white lighting for those great Instagram shots. The menu is colorful with cursive fonts, bold type, cute icons, and great puns (there’s a section for dog treats, and they’re called ‘pupcakes’).
Long gone are the days where vegan food used to just mean old wrinkled salad because By Chloe has revolutionized the vegan restaurant scene with its guac burgers, spicy thai salad, mac n cheese, air baked sweet potato fries with beet ketchup, gooey warm cinnamon rolls, and way more. There’s a brunch menu for weekends that feature pancakes and scrambled tofu, a grab + go menu for busy city girls like me, a dessert menu that features ice cream like kale and cookies (tastes better than it sounds), and there’s a seasonal menu that uses local ingredients for the dishes.
The two masterminds behind By Chloe are the executive chef, Chloe Cosarelli and Samantha Wasser, Creative-Director at ESquared Hospitality. Both under 30 and both lovers of good food - Chloe first earned national attention after winning Food Network’s “Cupcake Wars” (she was first vegan chef to win a culinary competition on national television and has written three cookbooks) and Samantha opened was featured as Zagat’s “30 Under 30” for opening up Horchata de Nueva York. These ladies share delicious, wholesome, plant-based food that fuels and energizes without compromising flavor, taste or satisfaction.
Something that I think is really special about By Chloe is that it is not just targeting the vegans of the world - By Chloe proves that vegan food can be delicious for everyone. They make an effort to partner with non plant based restaurants to veganize certain menu items. They have worked with Mimi Cheng’s, a dumpling restaurant in the East Village to create a dumpling inspired by the guac burger, the restaurant’s first ever vegan dumpling (their vegetarian dumpling has egg). They also worked with Black Tap Burger, a burger restaurant famous for their over-the-top milkshakes to create a vegan milkshake for a limited time. It is this celebration of delicious plant based food and inclusive nature of By Chloe that makes this place special.
