The Most #Basic Cookie (Pumpkin Spice/Chai)

This is what I call a #BasicGirl cookie. These cookies are soft, chewy, full of pumpkin spice and chai spices that isn't too spicy and not too sweet but enough to be a flavor kick. You don't have to be #Basic to enjoy these cookies, but you'll enjoy it more if you are ;). 

Serves: 3 dozen cookies
Time: 30 min

Ingredients

  • 2 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups white sugar
  • 2.5 teaspoons ground cinnamon 
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamon 
  • 1/3 teaspoon pumpkin spice
  • 1/2 cup vegan butter (I use Earth Balance), softened
  • 1 tbsp ground flax with 2.5 tbsp of water for egg substitute
  • 1/2 teaspoon vanilla extract

Steps

  1. Preheat oven to 350 degrees F
  2. In a large bowl, sift flour, baking soda, baking powder, and salt (Dry Ingredients)
  3. In another bowl, combine sugar, cinnamon, ginger, cardamon, and pumpkin spice. Set aside 1/3 cup of this mixture to roll the cookies
  4. Mix the softened vegan butter with the sugar-spice mix until fluffy and light.
  5. Add the flax egg and vanilla extract to the vegan butter/sugar-spice mixture until fully mixed through.
  6. Add in the dry ingredients and continue to mix everything together until fully combined
  7. Roll dough into small balls onto a baking sheet lined with parchment paper 
  8. Bake in the oven for 8 to 10 minutes
  9. Let cool for 5 minutes
